Inspired by the classic Welsh cheese Caerphilly, Carefully is Parish Hill Creamery's distinctive interpretation of the traditional British territorial style. Made from raw cow's milk and crafted using a milled curd technique, it begins with a firm, supple texture and bright, lactic flavor before gradually developing a drier, flakier paste and increasing complexity as it matures over the course of a year. Notes of cultured butter, toasted nuts, fresh hay, and gentle earthiness make this an exceptionally rewarding cheese at every stage of its aging journey.
Serve it on a cheese board with apples, pears, quince paste, and crusty bread, or grate it over soups, roasted vegetables, and baked potatoes. Founded in 2013 by cheesemaker and dairy scientist Peter Dixon and Rachel Fritz Schaal, Parish Hill Creamery is dedicated to preserving traditional cheesemaking through seasonal production, raw milk, and native cultures propagated on-site. Using milk from pasture-raised cows at nearby Elm Lea Farm, the creamery crafts cheeses only during the grazing season, allowing each wheel to reflect the changing landscape of Vermont. Matured in a historic repurposed root cellar in Westminster West, Parish Hill's cheeses embody a deep commitment to natural cheesemaking, collaborative farming, and regional expression.
